After the malt is conditioned, it is necessary to add liquid enzymes to the mash to enhance the conversion of starches to sugar. The mash will then be cooked to convert the starch to fermentable sugars. Continuous level measurement is required during the mash optimization to enable constant monitoring and control of the inside of the tank.
